I struggle getting my kids to eat their vegetables and this has become my go to meal to sneak in as many vegetables as possible without them even noticing. Look at how thick the pizza is with veggies! Sure I top it with cheese and pepperoni but the kids are none the wiser about all the nutrients they are eating with it. Since I am on the keto train, I love that I do not have to make two different dinners for the family.
This pizza has mushrooms, green and yellow peppers, spinach and zucchini. The dough is made using the recipe for Fathead dough from the website ditchthecarbs.com which is one of my go to sites for keto friendly recipes.
So have fun and be creative! Even get the kids to help decorate the pizza; they will love it. The more colorful the pizza, the better!
